Cogito Coffee’s retail side is built around traceable lots, with coffees identified by farm, producer, variety, and process. Examples include a natural Ethiopian heirloom coffee from Kayon Mountain Farm in Guji and an SL28 microlot from Oscar and Francisca Chacón in Costa Rica, processed as red honey on raised beds. The wider food program is connected to Salo’s local organic sourcing and regenerative small-farm network.
